Executive Chef, Nirmal Sudhanshu, at Marriott Hotel Al Forsan joined the team with over 13 years’ experience in the hospitality industry. His approach to the Ramadan offers at the property have included an enhanced buffet selection for the hotel’s signature restaurant, Khayal, during the holy month.
Chef Sudhanshu and his team will be presenting a delectable selection of dishes, matched with welcoming service from the hotel’s Food and Beverage team, amidst a Ramadan-adorned venue with views out to the hotel’s landscaped gardens and water features.
Combining a variety of styles and concepts to independently create enticing dishes, Chef Sudhanshu focuses on fresh local produce with quality at the core. “Our signature restaurant, Khayal, offers a vast buffet of hand-picked dishes from over four continents. The dining journey takes guests through China, Thailand, Japan, Italy, France, the Americas, India, the Mediterranean, UAE and so on, however we do our utmost to use locally produced ingredients that give a fresh taste to global dishes.”
Over the holy month, Khayal provides guests with Middle Eastern stations that offer traditional options, as well as contemporary interpretations of key Ramadan dishes. Chef Sudhanshu further explains that one of the unique selling points of Khayal over Ramadan is the Iftar and Suhoor tent, which can cater up to 800 people. The tents offers a separate Middle Eastern buffet in conjunction to the main restaurant’s international selection.
Catering to the needs of all, the buffet includes six separate stations with a variety of tastes, including vegan and vegetarian choices. Chef Sudhanshu explains, “We do not like to think of these as ‘alternative’ options, but as regular requirements for a five-star buffet. We also have detox and healthy juices, vegan-friendly desserts which are proving to be very popular”.
